Yep, it's football season, so that means all my fall recipes come out (even if it is 100 degrees outside).
This recipe is a family favorite and it's super easy! You and your family are sure to fall for it.
You can make this recipe with either 1-2 pounds of ground beef or 1-2 pounds of ground turkey. Tonight I used turkey.
Here's a list of everything else that you'll need:
1-2 lbs of ground turkey or beef
1 chopped yellow onion
1 small package taco seasoning
1 small package ranch dressing mix
3 cans stewed or diced tomatoes (I prefer diced)
2 small cans of green chilies
1 can baby butter beans
1 can pinto beans
1 can white hominy
1 can kidney beans
(or just 4 total cans of any type of beans you like)
2 cups water
You can also add potatoes and corn to the mix as well.
The soup will be served with the following:
tortilla chips
grated cheese
sour cream
Step 1:
Chop the onion and saute over medium heat in extra virgin olive oil.
Step 2:
Add the ground beef or turkey and cook over medium heat until cooked through.
Step 3:
Add the ranch dressing mix and taco seasoning mix. Stir well.
Step 4:
Add the tomatoes and green chilies (undrained).
Step 5:
Drain and rinse the cans of veggies and beans. Add to the pot.
Step 6:
Add 2 cups of water and bring to a boil. Then reduce heat and let simmer for 30 minutes.
Step 7:
Get out the sour cream, cheese, and chips, and eat generously! Enjoy~
